To break a set down into its individual parts, to sell them one by one or to add them to a parts collection.
Parting out a set means treating it as a source of parts: the pieces are sorted into stock or sold individually, and the set no longer exists as a set. On BrickDb such a copy has the build state Parted out and the grade For parts. Its pieces still count in your parts view.
